Taste Profile
Sweet at first, then finishing with a gentle dry tannic note that’s characteristic of the jamun fruit itself. Rich, layered, and far from ordinary, this is a honey that stays true to its source from beginning to end.
Best with black tea, dark chocolate, aged cheese, charcuterie. Its depth and slight tannic finish make it especially good with richer flavours.
Seasonality
Jamun trees flower only once a year across the plains of Mathura. The honey is harvested during this brief seasonal bloom in small batches by local beekeepers. Each jar captures the character of that single flowering season.
Why monofloral ?
With the hives placed amidst expansive groves of Jamun trees, the bees gather nectar predominantly from Jamun blossoms during the flowering season, allowing the honey to capture the distinctive character of the flower. Monofloral honey typically contains 45% or more pollen from a single floral species.
Left raw and minimally processed, it preserves its natural enzymes, pollen, and much of the layered complexity gathered through the bloom.
Storage
Store at room temperature away from direct sunlight. Do not refrigerate. Crystallization over time is natural and a sign of pure, minimally processed honey. Place the jar in warm water to return it to liquid form. Not suitable for infants under 12 months.
