Forest Nectar is an anaerobic fermented Liberica crafted to showcase the varietal’s rich sweetness and tropical character. Coming from our Elkhill estate, Forest Nectar draws inspiration from the biodiverse forest landscape in which the coffee is grown, along with the mellow, nectar-like sweetness developed through its slow fermentation and drying process.
The coffee carries notes of ripe jackfruit, soft molasses, and juicy sweetness, supported by a smooth, rounded body and lingering finish. With 72 hours of anaerobic fermentation followed by 30 days of slow drying on raised beds, Forest Nectar develops a profile that feels rich, mellow, and quietly expressive from the first sip to the last.
The strongest notes in Forest Nectar are ripe jackfruit and sweet molasses, creating a cup that feels mellow, juicy, and beautifully rounded. The smooth, full body carries the tropical sweetness gently across the palate while maintaining balance and clarity throughout the cup.
The finish is long, smooth, and delicately sweet, leaving behind a rich and lingering impression.
For this anaerobic fermented Liberica lot, selected ripe cherries undergo an intensive 72-hour anaerobic fermentation to develop greater complexity, depth, and mellowness within the cup. The fermentation is carefully monitored to ensure consistency and balance throughout the process.
Once fermentation is complete, the cherries are transferred onto raised drying beds and slow dried for approximately 30 days. This gradual drying process allows even moisture reduction while enhancing sweetness, body, and overall flavour development, resulting in a cup that feels smooth, balanced, and refined.
