Velvet Sun is an anaerobic fermented washed Arabica from Elkhill estate in Coorg. Crafted to bring together bright citrus character and rich chocolate sweetness in a beautifully balanced cup. Produced using SL9 and Chandragiri varietals, this lot undergoes careful fermentation and slow drying, allowing the coffee to develop clarity, sweetness, and a smooth syrupy texture while preserving its vibrant flavour profile.
The coffee carries notes of orange marmalade layered over mellow chocolate undertones, creating a cup that feels warm, expressive, and refined. The result is a balanced profile with gentle brightness, lingering sweetness, and a smooth finish that stays long after the final sip.Â
The strongest notes in Velvet Sun are orange marmalade and chocolate, coming together in a cup that feels rich, syrupy, and rounded. The citrus sweetness brings freshness and brightness to the cup, while the deeper chocolate notes add warmth and depth.
A smooth syrupy body carries the flavours effortlessly across the palate, allowing the sweetness to linger softly through the finish. As the cup cools, the citrus and chocolate notes become more integrated, creating a profile that feels both vibrant and comforting.
Handpicked fully ripened cherries are first floated to remove defects before being pulped using a disc pulper. Only the primary grade wet parchment is selected and anaerobically fermented with 100% mucilage for 36 hours, allowing the coffee to develop greater sweetness, body, and complexity while maintaining clarity within the cup.
Following fermentation, the wet parchment is thoroughly washed in a mechanical washer before undergoing a secondary dry fermentation for 8 hours without water. The parchment is then evenly spread onto raised drying beds and carefully dried over 18 days, allowing gradual moisture reduction and the development of a clean, balanced, and refined cup profile.
