taste profile
Light amber in colour with a soft floral aroma reminiscent of blooming coffee flowers after rain. Smooth and delicate on the palate, with gentle citrus notes, mellow sweetness and a clean finish, carrying a lingering hint of coffee.
Best with black coffee, sourdough toast, fresh cream, mild cheeses, citrus fruits. Its lighter floral character works especially well with subtle flavours.
seasonality
Coffee blossoms appear only for a short period each spring across the mist-laden hills of Coorg. During this brief flowering window, bees forage predominantly from delicate white coffee flowers before the bloom disappears with the season. Harvested in small batches, each jar reflects the character of that fleeting harvest.
why monofloral ?
With the hives placed amidst coffee plantations, the bees gather nectar predominantly from coffee blossoms during the flowering season, allowing the honey to carry the bloom’s subtle floral notes and mellow caramel-like depth. A honey is classified as ‘Monofloral’ when 45% or more of its pollen content is derived from a single floral species.
Left raw and minimally processed, it retains its natural enzymes, pollen, and much of the layered character gathered during the bloom.
storage
Store at room temperature away from direct sunlight. Do not refrigerate. Crystallisation over time is natural and a sign of pure, minimally processed honey. Place the jar in warm water to return it to liquid form. Not suitable for infants under 12 months.
