Taste Profile
Pale golden in colour. Soft floral aroma with a faint fruitiness. On the palate, smooth and light, with a gentle grape-like sweetness and a clean, lingering finish. Nothing sharp, nothing heavy.
Best with green teas, poached pears, yoghurt, mild ricotta. Best experienced off a clean spoon first, at room temperature, before anything else.
Seasonality
Lychee trees bloom for a narrow window each spring. The harvest follows that window and nothing else, which means this honey is available in limited quantities once a year. When the season ends, it ends.
Why monofloral ?
With the hives placed amidst lychee orchards, the bees gather nectar predominantly from lychee blossoms during the flowering season, allowing the honey to capture the bloom’s delicate floral sweetness and gentle fruity nuances.
A honey is classified as ‘Monofloral’ when 45% or more of its pollen content is derived from a single floral species.
Left raw and minimally processed, it retains its natural enzymes, pollen, and much of the floral complexity gathered during the bloom.
Storage
Store at room temperature, away from direct sunlight. Do not refrigerate. Crystallisation is natural.It is a sign of purity, not spoilage. Place the jar in warm water to return it to liquid. Not suitable for infants under 12 months.
